Duchess Potatoes

  • 6 Large Potatoes (peeled and quartered)
  • 2 tablespoons Chicken Salt Spice Blend (+ more for garnish)
  • 2 Egg Yolks
  • 1/4 cup Milk
  • 50 grams Butter ((you will need a little melted to brush over the potato before baking))
  • 1/3 cup Parmesan
  • Salt and Pepper
  • Garnish (optional)
  • Lemon Rind
  • Parsley
  • Parmesan
  1. Boil the potatoes in salted water until they soften. Meanwhile, preheat the oven to 200˚C (fan-forced).

  2. Mash the potatoes and mix in all the remaining ingredients, except for the garnish ingredients.

  3. Transfer the mashed potato mixture into a piping bag, then pipe it onto a baking tray. Brush the piped potato mix with butter.

  4. Bake for 15-30 minutes, or until the potato turns golden. Garnish and serve.
