Duchess Potatoes

Ingredients

6 Large Potatoes (peeled and quartered)
2 tbsp Chicken Salt Spice Blend (+ more for garnish)
2 Egg Yolks
¹⁄₄ cup Milk
50 g Butter ((you will need a little melted to brush over the potato before baking))
¹⁄₃ cup Parmesan
Salt and Pepper

Garnish (optional)

Lemon Rind
Parsley
Parmesan

Instructions

Boil the potatoes in salted water until they soften. Meanwhile, preheat the oven to 200˚C (fan-forced).

Mark as complete
Mash the potatoes and mix in all the remaining ingredients, except for the garnish ingredients.

Mark as complete
Transfer the mashed potato mixture into a piping bag, then pipe it onto a baking tray. Brush the piped potato mix with butter.

Mark as complete
Bake for 15-30 minutes, or until the potato turns golden. Garnish and serve.
