Instructions

  1. Trim pork belly.

  2. Season with The Gourmet Collection Lemon Pepper seasoning.
  3. Dry skin and poke lots of holes (or use a Jaccard to speed things up).

  4. Spray the skin with oil and season it with Grill Society SPG rub.

  5. Place into the air fryer at 220ËšC until crispy and the internal temperature reaches 74ËšC

  6. To make the dressing; chop chilli, mint, coriander and red onion. Then, add fish sauce. Rice wine vinegar, lime, garlic, sesame seeds, Grill Society SPG rub and mix.

  7. Cool for 5 minutes once pork is ready and slice.

  8. Top with the dressing. 

    Dig in!
